A special one barrel bottling. "Sémillon is a grape that I fell in love with during my time living/working in Australia, where I was exposed to so many great Hunter Valley Semillons. We love the way Sémillon expresses itself with skin maceration. Always very salty and rich." — Joe. There is a combination of peach, lemon rind, and wet stone on the nose while the palate is salty and fresh with hints of ginger.

Macerated on the skins for 60 days before a gentle pressing. Aged for 12 months in a neutral French oak barrel.
