As most of our Aligoté went into our white wine, we made a very limited quantity of this 45-day skin-macerated version taking the salinity and floral notes of the variety up a step. This wine delivers fresh saline and green apple crunch on the nose and hints of peach and orange blossom that settle on a medium-bodied finish. The interplay of salinity, fruit, and tannin will lean into dishes with texture, fat, and gentle spice.
