To make this cuvée, we directly pressed Aligoté sourced from sandy loam soils and let it rest in a mix of neutral French oak barrels and concrete egg tanks to keep things fresh but textured. Aromas of sea salt, hawthorn, lemon, and pear are soaked into a palate with buoyant acidity and brisk notes of crisp apple, brioche, and mineral. Super alive. We suggest opening up a bottle to be a charming companion to bright, briny dishes like a tangy goat cheese course, oysters, or a pristine platter of sushi.
