Fruit from Finnigan Hill is always some of the last to come in because of the high elevation and slow ripening. Our Pinot Grigio block produces low yields of very concentrated grapes; this concentration adds weight and texture to balance the fresh acidity typical of this site. The grapes for this wine were directly pressed without any skin maceration and then transferred to neutral French oak to begin a long fermentation process. Colder temperatures during winter kept ferment temperatures low and preserved aromatics. The total time in barrel for fermentation and aging was 24 months.
Fresh apple, ginger, and spice notes lead to a medium-bodied palate full of pear and mineral flavors. Pair with vegetarian dishes, cheese plates, or white fish.
