This Cinsault is all about elegance with a wild edge. We gave it 60 days of whole cluster maceration—foot-stomped daily to keep things lively—before a gentle press and aging in neutral French oak.
The nose is lifted and floral: rose petals, fresh strawberry, and just-picked cherries. On the palate, it leans savory and structured, with dried red fruits, a thread of bright acidity and soft, dusty tannins that give it a pleasant grip.
Light enough to chill, complex enough to sit with. Pair it with roast vegetables, Thai red curry, or a Moroccan tagine. It’s a versatile red that plays well with spice, herbs, and anything slow-cooked.
