We macerated this whole cluster Cabernet Sauvignon for six months before pressing. Longer macerations tend to make lighter and more structured wines as much of the color tends to drop out over time. After pressing, the wine was aged in neutral French oak barrels before bottling early this year.
Romantic and soulful with aromas of tar, dark cherry, and tobacco on the nose. The palate is medium to full bodied with firm, structured tannins. This is a wine meant for aging if you can manage to tuck it away!
