Joe decided to dive deep into Mallsoft again for this music-inspired orange blend. With Catsystem Corp blasting in the cellar over the course of a week in July, he decided to move away from overly floral varieties and create an Oregon-by-way-of-Alsace wine with more salt / mineral / umami notes.
High-elevation Chardonnay provides a backbone of acidity and nuance; Auxerrois adds peachy aromas and flavors as well as a weighty texture; Pinot Gris contributes grapefruit and black tea components and tannic structure.
