Our Pinot Grigio block produces low yields of very concentrated grapes; this concentration adds weight and texture to balance the fresh acidity typical of this site. The grapes for this wine were directly pressed without any skin maceration and then transferred to neutral French oak to begin a long fermentation process. Colder temperatures during winter kept ferment temperatures low and preserved aromatics.
